½ cup coconut oil (melted) or olive oil

1 tbsp apple cider vinegar



For the Frosting:


1 cup Greek yogurt (full fat)


2 tbsp maple syrup


1 tsp vanilla extract


Mixed berries or dark chocolate shavings for topping

Instructions:


Step 1: Preheat and Prep


Preheat your oven to 350°F (175°C).


Line a muffin tin with cupcake liners or lightly grease with oil.



Step 2: Mix Dry Ingredients


In a bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.



Step 3: Mix Wet Ingredients


In another bowl, whisk the melted coconut oil, maple syrup, eggs, and vanilla extract until well combined.


Stir in the almond milk and apple cider vinegar. Let it sit for 2 minutes to curdle slightly – this mimics buttermilk and gives the cupcakes a tender texture.



Step 4: Combine


Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing – a few lumps are fine!



Step 5: Bake


Pour the batter into the cupcake liners, filling each about ¾ full.


Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.



Step 6: Cool and Frost


Allow the cupcakes to cool completely before frosting.
